Aqua
Overlooking the infinity-edge pool, Agua is an indoor/outdoor restaurant featuring renowned Mexiterranean Cuisine by Award Winning Executive Chef Larbi Dahrouch. Agua offers a more casual alternative to Market, the resort's signature restaurant overseen by renowned chef Jean-Georges Vongerichten.
Agua is perched on a dramatic bluff overlooking the sea, adjacent to the resort's spectacular new infinity-edge pool. In the evening, the moon reflecting on the water and the serenading musicians set the mood for a festive meal.
The restaurant's decor, including vibrant red and yellow glass mosaic walls, blue and white patterned tiles accenting everything from a grand fireplace to the tables and a cluster of colorful Moroccan lanterns hanging over the Agua bar and lounge, is one of the highlights of this seaside eatery. There are also traditional Mexican touches such as custom-designed ceramic tableware from Guadalajara and a trickling fountain anchoring the restaurant's courtyard terrace. A stunning glass-enclosed kitchen allows guests to watch Chef Larbi and his team perform their culinary magic.
And magic it is, with appetizers such as a Roasted Medley of Vegetables "Tortita" with Picholine Olive Tapenade and Sauteed Foie Gras served with Blue Corn Polenta and a Red Wine Grenache Reduction. Entrees include signature dishes such as Tagine of Lamb served with Artichokes, Sundried Tomatoes, Goat Cheese and Raz Alhanout Sauce and Grilled Veal Chop served with Platano Macho "Estofado" (stew) in a Black Mole Sauce.
Agua's menu is complemented by a diverse wine list that showcases Mexico's many undiscovered wines that make up 60% percent of the list.

The perfect setting for lunch or light afternoon snack, this alfresco venue overlooks Vista Pool and the Pacific Ocean beyond. This outdoor terrace cafe, also created by Jean-Georges Vongerichten, features everything from quesadillas to ceviches to a variety of sandwiches and salads. The menu offers a continental blend of favourites and tropical libations.

Michelin stared chef Jean-Georges Vongerichten presents a unique dining concept in Market, his first outpost South of the Border. In understated elegance, Market features Euro-Asian cuisine with Mexican inspirations along with the country's most complete wine list.
Market, decorated with an understated elegance of warm natural colors and original artwork, brings to life Jean-Georges' French roots with Asian influence to reflect his travels in the region and the freshness and variety of Mexico's rich culinary tradition and ingredients.

Suviche Restaurant and Lounge
Suviche offers an impressive selection of fresh Sushi and Ceviches in a unique combination of traditional preparation with Jean-Goerges' signature blend of flavors and ingredients. The al fresco casual and fun ambiance is complemented with the scenic views of the Sea of Cortez and live entertainment.
Master Chef Nobuo Iwaseya, hand selected by Jean-Georges from his native Japan, will delight your palate with his sushi creations. The Sake Sommelier will guide you in making the perfect sake pairing to compliment your dining experience. An extensive green tea menu is also available.

The One&Only Palmilla wine experience serves as an exceptional introduction to the region's vineyards and cuisine. With an eye toward showcasing the world's premier vintages alongside newly discovered authentic wines of the region, the resort's wine cellar features an impressive collection.
Through the 220 bottle collection, guests can learn about new, up-and-coming Mexican boutique wines as well as savor prestigious older vintages. In addition to Mexican wines of every possible variety and style, the list also boasts 1500 international trendsetters and all time classics from France, Germany, Italy, Spain, Portugal, USA, Chile, Argentina, Australia, South Africa and New Zealand.
In addition to wine, the resort offers more than 53 exclusive labels of tequila by the glass with private or group tasting sessions and food pairings offered by Wine Director Manuel Arteaga at the resort's signature open-air restaurant Agua.
Mexican Wine Highlights at One&Only Palmilla include the Tequila Tasting experience and the Dinner and Wine Tasting experience.
The Tequila Tasting
With the Tequila Tasting experience, One&Only Palmilla introduces guests to the world of fine tequilas. Each tasting starts with a brief description of the tequila production process, regions and categories from White and Reposado to Anejo and Extra anejo. The description is then followed by a guided tasting of seven high quality tequilas beginning with non-aged White Tequila to Extra Anejo which is aged a minimum of three years. Hosted at Agua, the flights are customized based on the clients' preferences and tastes.
Dinners, Tastings and Events
Hosted by our resident Wine Director and his team of wine waiters, Mexican wine tastings are paired with a five course tasting menu.
For a private tasting experience, One&Only Palmilla can organize Dinner Under the Stars. Guests are treated to private dinner for two in the Cove, a secluded area of the resort. The meal comes complete with private butler, wine sommelier and chef to prepare guests a custom menu with signature items.
